Chocolate Mousse With Earl Grey Tea

Ингредиенты

  • 5 ounce (150 g) dark chocolate (75% cocoa)
  • 1 ¼ c. (30 cl) heavy whipping cream
  • ¼ c.(30 g) confectioner's sugar
  • 4 egg whites
  • 1 ½ tsp. Earl Grey tea

Инструкции

  1. In mortar, grind tea leaves to a very fine pwdr
  2. Break chocolate into small pcs
  3. Heat pcs of chocolate in double boiler or possibly in a pan over very low heat
  4. Beat egg whites till very stiff, adding confectioner's sugar at end
  5. Whip cream and add in grnd tea at end
  6. Pour melted chocolate into cream whipped with tea, making sure to mix very gently. To make it easier, add in chocolate little by little.
  7. Mix stiffly beaten egg whites with chocolate cream, stirring very gently with a spatula.
  8. Pour chocolate mousse into individual ramekins and chill 4 hrs.
