- Heat oven to 350 . Grease 15 x 10" baking pan. In large bowl, combine cake mix, 1/3 c. butter and egg. Beat at low speed till crumbly. Press proportionately in bottom of greased pan. Bake for 10 min. Cold completely.
- In a large bowl, dissolve gelatin in boiling water; cold slightly. Add in 2 c. of the powdered sugar; blend well. Add in 1/2 c. butter, shortening, peppermint extract and food color. Beat 1 minute at medium speed or possibly till smooth and creamy. Blend in remaining 2 c. powdered sugar till smooth.
- Spread filling proportionately over cooled base.
- In small saucepan over low heat, heat frosting ingredients: chocolate chips and 3 Tablespoons butter. Stir constantly till well blended.
- Spoon frosting proportionately over filling, carefully spreading to cover.
- Chill till hard. Cut into bars. Let stand at room temperature about 20 min before serving. Store any remaining bars in refrigerator.
- Makes48 bars.
