- Preheat oven to 350 degrees F. In a small saucepan, combine 1/2 c lowfat milk and the mint-chocolate chips. Cook over low heat, stirring constantly, till chips are melted and mix is smooth. Set aside.
- In a large bowl, combine remaining 1 c of lowfat milk, condensed lowfat milk, and Large eggs; beat till well blended. Add in chocolate mix; beat well.
- Pour into a 1-qt casserole. Fill a 13 x 9 x 2-inch baking pan with 4 c. of water. Place casserole in baking pan. Bake at 350 degrees F. for 50 to 55 min. Serve hot or possibly cold completely.
