- The cake:
- 3 cups cake flour (I used an AP/cornstarch sub)
- 1 t baking powder
- 1/2 t baking soda
- 1/2 t salt
- 3 large eggs
- 2 cups sugar
- 1 cup regular olive oil (or any other vegetable oil)
- 1 T vanilla
- 1 cup sour cream (I used a mish mash of what I had around of low fat sour cream and no fat Greek yogurt plus some heavy cream)
- 1 1/2 cups (9 oz) mini chocolate chips
- The glaze:
- 1/3 cup heavy whipping cream
- 1/4 cup (1/2 stick) unsalted butter, optional (see notes above)
- 2 T light corn syrup
- 6 oz semi sweet (60% cacao) chocolate, finely chopped
- 2 cups regular or mini chocolate chips for studding onto outside of cake, optional (see notes above)

.%20If%20using%20a%20tube%20pan,%20line%20the%20bottom%20with%20buttered%20parchment,%20but%20I%20was%20ok%20with%20my%20holiday%20tree%20bundt%20pan%20and%20nonstick%20spray,%20I%20just%20used%20a%20lot%20(I%20was%20lazy%20with%20my%20silicone%20loaf%20pan%20and%20only%20sprayed%20lightly%20and%20it%20did%20indeed%20stick%20so%20do%20be%20generous).%3C/p%3E%3Cp%3ESift%20the%20flour,%20baking%20powder,%20baking%20soda%20and%20salt%20together%20and%20then%20whisk%20thoroughly.%20Set%20aside.%20Remove%202%20tablespoons%20of%20the%20mixture%20and%20toss%20the%20mini%20chocolate%20chips%20with%20it.%3C/p%3E%3Cp%3EUse%20an%20electric%20mixer%20to%20beat%20the%20eggs%20and%20sugar%20on%20medium%20speed%20until%20light%20and%20fluffy,%20about%202%20minutes.%20With%20the%20mixer%20running%20on%20low,%20add%20the%20oil%20and%20vanilla%20until%20it%20is%20just%20blended.%20Add%20the%20flour%20mixture%20and%20sour%20cream,%20alternating,%20beginning%20and%20ending%20with%20the%20flour%20mix,%20in%203%20and%202%20additions%20respectively.%20Mix%20to%20incorporate.%20When%20there%20very%20little%20flour%20streaks%20left,%20add%20the%20floured%20chocolate%20chips%20and%20fold%20until%20everything%20is%20incorporated%20with%20no%20flour%20streaks.%3C/p%3E%3Cp%3EScrape%20the%20batter%20into%20the%20prepared%20pan.%20Smooth%20the%20top%20and%20place%20it%20in%20the%20oven.%20Bake%20until%20a%20toothpick%20inserted%20in%20the%20center%20of%20the%20cake%20comes%20out%20with%20just%20a%20few%20crumbs%20attached%20(ignore%20any%20melted%20chocolate%20from%20hitting%20a%20chip),%20about%201%20hour.%20If%20you%20use%20a%20smaller%20pan,%20as%20I%20did,%20set%20the%20timer%20for%20less%20and%20watch%20the%20cake%20as%20it%20may%20be%20done%20early.%3C/p%3E%3Cp%3ELet%20the%20cake%20cool%20in%20the%20pan%20for%2015%20minutes.%20Invert%20the%20cake%20onto%20a%20cooling%20rack%20lined%20with%20parchment%20paper%20(to%20prevent%20indentations%20and%20sinking).%20Let%20the%20cake%20cool%20completely%20before%20glazing.%3C/p%3E%3Cp%3EFor%20the%20glaze,%20combine%20the%20cream%20and%20corn%20syrup%20in%20a%20medium%20saucepan%20and%20heat%20over%20medium%20heat.%20If%20you%20are%20going%20to%20stud%20the%20outside%20of%20the%20cake%20with%20chocolate%20chips,%20also%20add%20the%20butter.%20Mix%20over%20the%20heat%20until%20the%20mixture%20is%20hot,%20the%20butter%20melted,%20and%20is%20forming%20tiny%20bubbles%20at%20the%20edges.%20Do%20not%20let%20it%20come%20to%20a%20true%20boil%20(if%20it%20does,%20pour%20it%20over%20the%20chocolate%20through%20a%20sieve).%20Pour%20it%20over%20the%20chopped%20chocolate%20and%20let%20it%20sit%20for%201%20minute.%20Then%20stir%20the%20chocolate%E2%80%93it%20will%20become%20a%20melted,%20smooth%20ganache.%3C/p%3E%3Cp%3EKlivans%20instructions%20call%20for%20setting%20the%20ganache%20aside%20for%2020%20minutes%20to%20let%20it%20thicken.%20I%20suspect%20(see%20my%20notes%20above)%20you%20should%20only%20do%20this%20if%20you%20are%20pressing%20chocolate%20chips%20into%20the%20cake.%20Otherwise%20let%20it%20cool%20for%20about%205%20minutes.%20Remove%20the%20parchment%20under%20the%20cake.%20Place%20wax%20paper%20under%20the%20cooling%20rack.%20Pour%20the%20glaze%20over%20the%20cake,%20being%20sure%20to%20get%20the%20inside%20and%20outside.%20Using%20a%20second%20piece%20of%20wax%20paper%20to%20catch%20additional%20drips,%20remove%20the%20original%20wax%20paper%20and%20use%20it%20to%20pour%20the%20chocolate%20that%20dripped%20down%20back%20over%20the%20cake.%20If%20desired,%20press%20chocolate%20chips%20onto%20the%20exterior%20of%20the%20cake.%3C/p%3E%3Cp%3ELet%20set%20completely%20before%20slicing.%3C/p%3E){kind=link}
