%3C/p%3E%3Cp%3EThis%20month's%20challenge%20was%20to%20make%20something%20that%20used%20caramel%20and%20pretzels.%20%20With%20a%20smile%20on%20my%20face%20I%20went%20on%20a%20merry%20search...I%20mean%20what%20could%20be%20better%20than%20a%20pot%20of%20caramel%20%20alongside%20a%20pretzel%20unless%20it%20is%20the%20pot%20of%20caramel%20without%20the%20pretzel!%3C/p%3E%3Cp%3EI%20searched%20and%20searched%20not%20quite%20certain%20what%20I%20wanted%20to%20do...I%20had%20it%20down%20to%20cupcakes%20or%20a%20marvelous%20tart%20recipe%20that%20my%20daughter%20found.%20%20If%20I%20hadn't%20just%20finished%20battling%20jet%20lag%20and%20%20a%20cold,%20I%20would%20have%20made%20the%20tart%20but%20the%20energy%20level%20has%20been%20a%20bit%20low...so,%20Chocolate%20Fudge%20Cupcakes%20with%20Salted%20Caramel%20Frosting%20won.%3C/p%3E%3Cp%3EI%20must%20admit%20to%20being%20a%20bit%20nervous%20about%20the%20cake.%20%20The%20recipe%20suggested%20adding%20an%20instant%20pudding%20mix%20with%20I%20know%20makes%20the%20cake%20super%20moist...but%20the%20amount%20of%20liquid%20seemed%20a%20bit%20out%20of%20proportion%20from%20what%20I%20have%20done%20in%20the%20past.%20I%20usually%20have%20more%20liquid...but,%20I%20rolled%20with%20it.%20%20I%20do%20have%20to%20admit%20to%20adding%20some%20chocolate%20chips%20and%20a%20splash%20of%20%20Kahlua...just%20because.%3C/p%3E%3Cp%3EChocolate%20Fudge%20Cupcakes%3C/p%3E%3Cp%3Ewith%20Salted%20Caramel%20Frosting%3C/p%3E%3Cp%3EYield:%20%2020-22%20cupcakes%3C/p%3E%3Cp%3ECupcakes%3C/p%3E%3Cp%3E1%20box%20Devil's%20Food%20Cake%20Mix%3C/p%3E%3Cp%3EMake%20the%20frosting%20first:%20%20Melt%20the%20butter%20in%20a%20small%20saucepan%20over%20low%20heat.%20%20Once%20melte,%20add%20brown%20sugar%20and%20heavy%20cream.%20%20Stir%20constantly%20over%20medium%20heat%20until%20sugar%20is%20dissolved.%20%20Add%20salt.%20%20Allow%20to%20bubble%20for%20exactly%202%20minutes.%20%20Remove%20from%20heat%20and%20allow%20to%20cool.%20%20Beat%20in%20powdered%20sugar,%20one%20cup%20at%20a%20time,%20until%20desired%20consistency%20is%20reached.%3C/p%3E%3Cp%3EMake%20the%20cupcakes:%20%20Preheat%20over%20to%20350%20degrees%20F.%20%20Line%20two%2012-cupcake%20pans%20with%20liners.%20%20Set%20aside.%3C/p%3E%3Cp%3EUsing%20a%20mixer%20beat%20together%20the%20cake%20mix,%20pudding%20mix,%20eggs,%20oil,%20milk,%20sour%20cream%20on%20medium.speed.%20%20Beat%20until%20well%20combined%20about%202%20minutes.%3C/p%3E%3Cp%3EStir%20in%20the%20chocolate%20chips.%3C/p%3E%3Cp%3EScoop%20the%20batter%20evenly%20into%20cupcake%20liners.%20%20I%20used%201/4-1/3%20cup%20per%20liner.%3C/p%3E%3Cp%3EBake%20for%2020-25%20minutes,%20or%20until%20a%20toothpick%20inserted%20in%20the%20center%20comes%20out%20clean.%20%20Remove%20the%20cupcakes%20from%20the%20tin%20to%20a%20rack%20to%20cool.%3C/p%3E%3Cp%3EOnce%20cool,%20frost%20the%20cupcakes%20with%20the%20salted%20caramel%20frosting%20and%20garnish%20with%20a%20pretzel%20twist%20or%20crushed%20pretzels.%3C/p%3E%3Cp%3EI%20must%20tell%20you%20about%20my%20frosting%20challenge.%20%20While%20the%20frosting%20was%20cooling,%20it%20was%20also%20setting%20up...oh%20dear...what%20to%20do.%20%20I%20moved%20faster!%20%20%20As%20I%20beat%20in%20the%20powdered%20sugar%20it%20got%20very%20thick.%20%20A%20little%20half%20and%20half%20saved%20the%20day...and%20I%20was%20able%20to%20get%20it%20to%20a%20consistency%20that%20would%20work.%20I%20have%20made%20caramel%20with%20another%20recipe%20that%20I%20would%20try%20next%20time.%3C/p%3E%3Cp%3EAll%20and%20all,%20very%20nice%20cupcakes.%20%20Mr.%20T.%20enjoyed%20every%20bite%20and%20was%20going%20back%20for%20more...%3C/p%3E%3Cp%3EI%20am%20also%20sharing%20at%20Foodie%20Friday%20hosted%20by%20Michael%20at%20Rattlebridge%20Farm.%3C/p%3E){kind=link}
