- In top of a double boiler or possibly a metal bowl set over a saucepan of simmering water heat chocolate, stirring till smooth, and stir in butter till it is incorporated.
- In a heavy saucepan heat cream over moderate heat till warm but don't boil. Add in sugar and stir till dissolved. Add in cream to chocolate 1/2 c. at a time, stirring till cream is incorporated before adding next 1/2 cupful. Stir in vanilla and optional liqueur.
- Serve fondue in a fondue pot over a very low flame with accompaniments.
- This recipe yields 1 3/4 c. fondue.
