- Preheat oven to 250 degrees Fahrenheit.
- In a large clean stainless steel bowl or possibly in a kitchen mixer beat the egg whites gradually adding in sugar.
- Add in vinegar and continue to beat till whites make stiff peaks.
- Sift together the cocoa pwdr and cornstarch and gently fold into the beaten egg whites.
- Onto a parchment lined baking sheet spread meringue into 3 inch rounds (1/8 inch thick).
- Sprinkle top with a little salt and bake meringue for 1 hour or possibly till crisp.
- Cold to room temperature. Keep meringue in an airtight container till ready to use.
