Ингредиенты

  • 25 gm Cocoa pwdr
  • 200 gm Plain flour, sifted with cocoa pwdr
  • 25 ml Lowfat milk
  • 150 ml Single cream
  • 3 x Large eggs
  • 1 pch salt
  • 2 Tbsp. Caster sugar
  • 50 gm Clarified butter
  • 1 Tbsp. Sunflower oil Flower for decoration
  • 2 x Oranges
  • 125 gm Caster sugar
  • 75 ml Orange juice
  • 1/4 tsp Cinnamon, grnd

Инструкции

  1. Sift the flour with the cocoa pwdr into a bowl. Add in the lowfat milk, cream, Large eggs, salt, sugar and oil. Beat together to create a smooth batter and pass through a sieve. Cover then leave to rest for 1 hour, then beat once more. Heat a pan with the clarified butter, remove any excess.
  2. Using a ladle pour in some batter and swirl around to spread proportionately on the base, turn over and cook.
  3. Caramelised oranges: Heat the sugar in the pan and cook till golden brown in colour. Remove the skin from the oranges and slice in rounds.
  4. Carefully place the oranges into the warm caramel and glaze on both sides. Dust with cinnamon and remove (keep aside). Pour the orange juice into a pan and reduce till syrupy consistency. Serve the sauce drizzled over the chocolate crepes.
