Chocolate Covered Marshmallow Cookies

Ингредиенты

  • 1 3/4 c. Flour
  • 1/2 tsp Salt
  • 1/2 tsp Baking soda
  • 1/2 tsp Baking pwdr
  • 1/2 c. Shortening
  • 1 c. Sugar
  • 1 x Egg
  • 1 tsp Vanilla extract
  • 1/4 c. Lowfat milk
  • 18 lrg Marshmallows halved
  • 36 x Pecan halves if you like
  • 2 c. Confectioners' sugar
  • 5 Tbsp. Cocoa pwdr
  • 1/8 tsp Salt
  • 3 Tbsp. Butter or possibly margarine softened
  • 4 Tbsp. Light cream (4 to 5)

Инструкции

  1. Sift together first 4 ingredients. Set aside. In mixing bowl, cream shortening and sugar. Add in egg, vanilla and lowfat milk. Add in flour mix and mix well. Drop by heaping teaspoonfuls about 2" apart onto greased cookie sheets.
  2. Bake at 350 for 8 min. Don't OVERBAKE. Remove cookies from oven, and top each with a marshmallow half. Return to oven for 2 min. Place cookies on wire racks to cold.
  3. Meanwhile, beat last 5 ingredients together. Spread on each cookie, and top with a pecan half, if you like.
