,%20but%20I%20haven%E2%80%99t%20forgotten%20about%20those%20chocolate%20chip%20biscotti.%20The%20little%20deli%20isn%E2%80%99t%20there%20anymore,%20as%20the%20campus%20has%20been%20updated%20and%20renovated%20quite%20a%20bit%20since%20I%20left,%20and%20I%E2%80%99m%20pretty%20sure%20it%20was%20usurped%20by%20a%20Starbucks.%20I%E2%80%99ve%20thought%20about%20recreating%20those%20biscotti%20so%20many%20times,%20but%20really%20had%20no%20idea%20where%20to%20start.%3C/p%3E%3Cp%3EThey%20weren%E2%80%99t%20quite%20as%20crunchy%20as%20my%20grandma%E2%80%99s,%20and%20they%20were%20a%20little%20more%20sweet.%20After%20doing%20some%20digging%20around,%20I%20came%20across%20a%20unique%20biscotti%20recipe%20that%20used%20a%20blend%20of%20butter%20and%20shortening.%20Up%20until%20that%20point,%20I%20had%20only%20ever%20seen%20them%20made%20with%20butter%20or%20vegetable%20oil.%20I%20thought%20that%20this%20might%20be%20the%20key%20to%20getting%20the%20texture%20that%20I%20was%20looking%20for,%20and%20indeed%20it%20was!%3C/p%3E%3Cp%3EThese%20biscotti%20are%20certainly%20firm,%20but%20more%20tender%20than%20crunchy%20and%20are%20loaded%20with%20chocolate%20chips.%20If%20you%20prefer%20a%20little%20less%20chocolate%20(what?!),%20you%20could%20take%20the%20chocolate%20chips%20down%20to%201%20cup,%20but%20that%E2%80%99s%20the%20only%20modification%20I%20would%20make.%20I%20know%20many%20people%20opt%20not%20to%20bake%20with%20shortening,%20but%20it%20does%20have%20different%20properties%20than%20butter,%20and%20in%20this%20instance,%20it%20is%20totally%20the%20difference%20maker%20in%20achieving%20the%20texture%20I%20was%20going%20after.%3C/p%3E%3Cp%3EI%20haven%E2%80%99t%20been%20able%20to%20stop%20eating%20these%20since%20I%20made%20them,%20and%20I%20love%20that%20I%20can%20have%20a%20little%20taste%20of%20my%20favorite%20college%20deli%20whenever%20I%20want%20now!%3C/p%3E%3Cp%3EOne%20year%20ago:%20Classic%20Buttermilk%20Waffles%3C/p%3E%3Cp%3ETwo%20years%20ago:%20Cinnamon-Almond%20French%20Toast%3C/p%3E%3Cp%3EThree%20years%20ago:%20Kentucky%20Derby%20Chocolate%20Bourbon%20Walnut%20Pie%3C/p%3E%3Cp%3EFour%20years%20ago:%20Homemade%20Taco%20Seasoning%20Mix%3C/p%3E%3Cp%3EFive%20years%20ago:%20Coffee-and-Espresso%20Layered%20Cheesecake%3C/p%3E%3Cp%3EChocolate%20Chip%20Biscotti%3C/p%3E%3Cp%3EYield:%20About%203%20dozen%20biscotti%3C/p%3E%3Cp%3EPrep%20Time:%2015%20minutes%3C/p%3E%3Cp%3ECook%20Time:%2045%20minutes%3C/p%3E%3Cp%3ETotal%20Time:%201%20hour%2030%20minutes%3C/p%3E%3Cp%3ETender%20biscotti%20cookies%20loaded%20with%20chocolate%20chip%20cookies.%3C/p%3E%3Cp%3EIngredients:%3C/p%3E%3Cp%3EDirections:%3C/p%3E%3Cp%3E1.%20Preheat%20oven%20to%20375%20degrees%20F.%20Line%20a%20baking%20sheet%20with%20parchment%20paper.%3C/p%3E%3Cp%3E2.%20In%20a%20mixing%20bowl,%20cream%20together%20the%20butter,%20shortening%20and%20sugar%20on%20medium%20speed%20until%20light%20and%20fluffy,%20about%202%20minutes.%20Add%20the%20eggs%20one%20at%20a%20time,%20beating%20well%20after%20each%20addition,%20and%20stopping%20to%20scrape%20the%20sides%20and%20bottom%20of%20the%20bowl%20between%20additions.%20Beat%20in%20the%20vanilla%20extract,%20baking%20powder%20and%20salt.%20Reduce%20the%20mixer%20speed%20to%20low%20and%20gradually%20add%20the%20flour%20until%20incorporated.%20Add%20the%20chocolate%20chips%20and%20mix%20on%20low%20speed%20briefly%20to%20evenly%20distribute%20in%20the%20dough.%3C/p%3E%3Cp%3E3.%20Turn%20out%20the%20dough%20to%20a%20lightly%20floured%20work%20surface.%20Divide%20the%20dough%20in%20two%20and%20shape%20each%20piece%20into%20a%2012-inch%20log.%20Transfer%20the%20logs%20to%20the%20prepared%20baking%20sheet%20and,%20with%20damp%20fingers,%20lightly%20flatten%20the%20logs%20to%20about%203%20inches%20wide.%3C/p%3E%3Cp%3E4.%20Bake%20for%2020%20to%2025%20minutes,%20until%20the%20logs%20are%20lightly%20browned%20around%20the%20edges.%20Remove%20from%20the%20oven%20and%20let%20rest%20for%2020%20minutes.%20Reduce%20the%20oven%20temperature%20to%20300%20degrees%20F.%3C/p%3E%3Cp%3E5.%20Transfer%20the%20logs%20to%20a%20cutting%20board%20and,%20using%20a%20serrated%20knife,%20slice%20them%20on%20the%20diagonal%20into%20%C2%BE-inch%20to%201-inch%20slices.%20Return%20the%20slices,%20cut-side-up,%20to%20the%20baking%20sheet%20and%20bake%20for%2015%20minutes,%20then%20turn%20them%20over%20and%20bake%20for%20an%20additional%2015%20minutes.%20Remove%20from%20the%20oven%20and%20allow%20to%20cool%20completely.%20Store%20in%20an%20airtight%20container%20at%20room%20temperature%20for%20up%20to%202%20weeks.%3C/p%3E){kind=link}
