- Preheat oven to 350. Place 2 cups of the pecans in food processor. Process until finely ground. Mix with sugar and butter. Press into 9 inch pie plate to form crust. Bake 12 minutes or until lightly browned. Remove and cool completely.
- Microwave caramels and 1/3 cup of whipping cream for three minutes, or until caramels are melted. Stir after each minute. Pour into crust and sprinkle with remaining cup of pecans.
- Place chocolate, remaining cream, powdered sugar, and vanilla in a saucepan. Cook and stir over low heat until chocolate melts. Pour over pie, spreading evenly. Refrigerate at least two hours before serving.
