  • 3 cups pecan pieces, divided
  • 1/4 cup sugar
  • 1/4 cup melted butter
  • 1 14 oz pkg caramels
  • 2/3 cup whipping cream
  • 1 pkg semi-sweet bakiing chocolate
  • 1,4 cup powdered sugar
  • 1/2 tsp vanilla

  1. Preheat oven to 350. Place 2 cups of the pecans in food processor. Process until finely ground. Mix with sugar and butter. Press into 9 inch pie plate to form crust. Bake 12 minutes or until lightly browned. Remove and cool completely.
  2. Microwave caramels and 1/3 cup of whipping cream for three minutes, or until caramels are melted. Stir after each minute. Pour into crust and sprinkle with remaining cup of pecans.
  3. Place chocolate, remaining cream, powdered sugar, and vanilla in a saucepan. Cook and stir over low heat until chocolate melts. Pour over pie, spreading evenly. Refrigerate at least two hours before serving.
