November 29th came and went, just like the rainstorms we've been experiencing for most of this past week. My four year anniversary for "A Feast for the Eyes" is on this day, and I really wanted to write a special post. But, mid-week blogging this time of year, is a rare occurrence. I have become a weekend food blogger, so I am celebrating my anniversary with a new cake recipe.
In four years of blogging, I'm so thankful for the community of fellow food bloggers, and followers, who take the time to visit my virtual kitchen. .%20%20Before%20I%20knew%20it,%20the%20time%20clock%20was%20winding%20down%20to%20just%20enough%20to%20time%20to%20whip%20up%20a%20cake%20without%20a%20whole%20lot%20of%20extra%20time%20to%20spare.%3C/p%3E%3Cp%3EI%20spied%20a%20box%20of%20Duncan%20Hines%20Chocolate%20Cake%20(I%20was%20sent%20a%20free%20coupon%20to%20try)...and%20then%20I%20hit%20the%20moment%20of%20decision.%20Do%20I%20use%20a%20box%20mix%20(gasp)%20or%20bake%20a%20cake%20from%20scratch?%20Did%20I%20have%20time%20to%20bake%20a%20scratch%20cake?%20Decisions,%20decisions.%3C/p%3E%3Cp%3EOK,%20I%20confess.%20%20I%20made%20the%20box%20mix,%20in%203%208-inch%20cake%20pans,%20baked%20for%20about%2015%20minutes.%20%20(More%20on%20that,%20later.)%20My%20inspiration%20for%20the%20rest%20of%20the%20cake%20was%20found%20on%20Valerie's%20lovely%20blog,%20%22Un%20Gamine%20Das%20La%20Cuisine%22.%20%20Chocolate%20and%20Raspberry%20is%20a%20combination%20that%20I%20dearly%20love.%20%20The%20frosting%20really%20grabbed%20my%20attention,%20as%20it%20has%20marshmallow%20creme%20in%20it.%3C/p%3E%3Cp%3EFor%20the%20butter%20cream%20filling,%20softened%20butter%20was%20whipped%20and%20then%20seedless%20raspberry%20jam%20was%20added.%20%20Confectioners%20sugar%20transformed%20the%20filling%20into%20a%20smooth,%20pink,%20filling.%20Refrigerate%20for%20at%20least%2030%20minutes%20(can%20be%20made%20a%20day%20before).%3C/p%3E%3Cp%3ENow,%20for%20the%20frosting....%3C/p%3E%3Cp%3EYou%20need%206%20ounces%20of%20Bittersweet%20Chocolate%3C/p%3E%3Cp%3EI%20melted%20the%20chocolate%20in%20the%20microwave%20for%201-1/2%20minutes.%20Stir%20and%20allow%20to%20cool.%20%20Softened%20unsalted%20butter%20is%20beaten%20until%20creamy.%20%20The%20cooled%20chocolate%20is%20added%20and%20mixed.%3C/p%3E%3Cp%3EI%20love%20marshmallow%20creme.%20Someday%20soon,%20I'm%20going%20to%20make%20it%20from%20scratch.%20(Pinkie%20promise.)%3C/p%3E%3Cp%3EI%20had%20to%20double-check%20that%20I%20only%20need%20to%20add%20six%20tablespoons%20of%20confectioners%20sugar.%20Yes,%20that's%20right.%20%20Add%20the%20marshmallow%20cream%20and%20beat%20until%20smooth.%20I%20loved%20this%20frosting!%20%20It%20was%20that%20heavy%20sugary%20taste%20of%20a%20traditional%20buttercream.%20It%20was%20billowy,%20and%20just%20chocolatey%20enough%20to%20satisfy%20my%20sweet%20tooth.%20%20Love.%3C/p%3E%3Cp%3EThe%20frosting%20is%20lovely%20to%20work%20with.%20%20It's%20silky%20and%20easily%20spreadable.%20%20By%20the%20way,%20my%20cake%20frosting%20dramatically%20improved%20when%20I%20invested%20in%20a%20few%20baking%20tools%20that%20I%20don't%20like%20to%20be%20without:%3C/p%3E%3Cp%3EOff-Set%20spatula--%20one%20of%20my%20favorite%20and%20most%20used%20baking%20tools%20to%20spread%20batter%20or%20frosting%20evenly.%3C/p%3E%3Cp%3ERotating%20Cake%20Stand%20-%20%20By%20turning%20the%20cake,%20and%20holding%20an%20off-set%20spatula,%20I%20can%20achieve%20a%20smoother%20finish%20to%20the%20frosted%20cake.%3C/p%3E%3Cp%3ECake%20Lifter%20-%20This%20large%20spatula%20is%20what%20I%20use%20to%20safely%20lift%20cakes%20from%20a%20cooling%20rack%20to%20the%20cake%20stand.%20%20No%20more%20broken%20cakes!%3C/p%3E%3Cp%3EI%20had%20thirty%20minutes%20left%20to%20get%20dressed%20and%20ready%20to%20leave%20to%20our%20friends'%20home.%20%20If%20I%20had%20more%20time,%20I%20would%20have%20added%20fancier%20finishing%20touches.%20In%20this%20case,%20simple%20is%20good.%20%20The%20cake%20was%20set%20into%20the%20refrigerator%20until%20it%20was%20time%20to%20go.%3C/p%3E%3Cp%3EOur%20friends%20know%20that%20I'm%20a%20food%20blogger,%20and%20they%20do%20read%20my%20blog.%20So,%20they%20are%20used%20to%20desserts%20being%20served%20with%20a%20slice%20missing.%20%20Natural%20light%20was%20quickly%20disappearing,%20and%20I%20wanted%20to%20taste%20the%20cake--%20purely%20for%20quality%20control.%3C/p%3E%3Cp%3EHere's%20the%20recipe%20card:%3C/p%3E){kind=link}
