- Preheat oven to 350 degrees. Grease and flour cake pans 2 (8 inch) round. In large bowl blend all ingredients till moistened, beat 2 min at high speed. Pour into pans. Bake 30-40 min (toothpick test). Cool on rack 15 min. Remove from pans and cool completely. Split in half forming 4 layers. Fill with icing.
- Fold and frost garnish with coconut, pecans and stemmed maraschino cherries.
