- Preheat the oven to 370°F (190°C)
- Heat the chocolate and unsalted butter together in a bain-marie. Set a little to one side
- Gradually add in the sugar and the Large eggs one by one, stirring constantly
- Slowly mix in the flour, constantly stirring well on a low heat
- Pour the mix into a cake pan and bake in the oven for 20 min
- As soon as the cake has finished baking, quickly turn it out and set it aside
- You should also have set aside some of the melted chocolate which you used to make the cake mix.
- In a saucepan (preferably cast-iron), heat the sugar and 4 Tbsp. of water on a very low heat
- As soon as the caramel begins to create, turn the pan from side to side to mix together well
- Remove from the heat as soon as the caramel turns a nice amber color
- Add in the mascarpone and salted butter
- Mix well till the caramel is nice and creamy, and let it cold
- Top the cake with the caramel and the rest of the melted chocolate from the cake mix
- Put the dessert in the refrigerator for a few min before serving.
