,%20but%20me%20being%20me%20I%20have%20played%20with%20different%20nuts.%20I%20have%20done%20pecans,%20hazelnuts,%20and%20even%20macadamia%20nuts.%20I%20have%20loved%20them%20all.%20Sadly,%20my%20husband%20and%20children%20do%20not,%20and%20you%20can%20imagine%20how%20that%20goes.%20Eventually%20I%20just%20grab%20the%20whole%20tin%20and%20place%20it%20beside%20me%20while%20I%20watch%20TV.%20(No,%20Laura!%20No!)%20So%20this%20year%20I%20thought%20I%20would%20change%20things%20up%20a%20bit.%3C/p%3E%3Cp%3EMy%20inspiration%20to%20change%20things%20up%20came%20from%20a%20cookbook%20called%20Tate%E2%80%99s%20Bake%20Shop:%20Baking%20For%20Friends,%20which%20I%20won%20from%20Susan%20at%2030AEATS.%20She%20had%20a%20giveaway%20going%20for%20a%20bakeshop%20I%20had%20never%20heard%20of%20that%20was%20located%20in%20the%20Hamptons.%20Apparently%20they%20had%20a%20new%20cookbook%20out.%20The%20winner%20would%20also%20receive%20baked%20goods%20from%20the%20bakery,%20but%20you%20know%20me,%20I%20bake%20constantly%20and%20have%20an%20insatiable%20love%20of%20collecting%20cookbooks,%20so%20I%20did%20not%20really%20care%20about%20the%20baked%20goods,%20but%20thought%20the%20cookbook%20looked%20fun%20so%20I%20left%20a%20comment.%3C/p%3E%3Cp%3EI%20won!%20It%20was%20hysterical%20unpacking%20all%20those%20boxes%20of%20baked%20goods!%20The%20girls%20found%20it%20even%20crazier%20than%20I%20did%E2%80%93and%20enjoyed%20it%20tremendously!%20If%20there%20was%20one%20thing%20I%20probably%20did%20not%20need,%20it%20was%20more%20cookies.%20However,%20those%20delicious%20cookies%20turned%20out%20to%20be%20a%20blessing,%20because%20they%20kept%20beautifully%20in%20the%20freezer%20and%20we%20I%20ate%20them%20when%20I%20was%20sick%20and%20craving%20sweets.%3C/p%3E%3Cp%3EThe%20first%20recipes%20I%20noticed%20in%20the%20cookbook%20combined%20mint%20and%20chocolate%E2%80%93clearly%20Kathleen%20King,%20the%20bakery%20owner,%20and%20I%20have%20something%20in%20common!%20But%20the%20first%20recipe%20I%20bookmarked%20was%20the%20one%20for%20these%20Chocolate%20Butter%20Balls,%20because%20I%20thought%20it%20might%20satisfy%20my%20need%20for%20a%20Wedding%20Cookie%20while%20being%20something%20my%20family%20might%20enjoy%20more.%20Bingo!%20As%20written,%20the%20recipe%20is%20not%20coated%20in%20sweetened%20cocoa%20powder,%20but%20the%20cookie%20is%20not%20at%20all%20too%20sweet,%20if%20anything%20a%20tad%20under-sweet,%20and%20I%20like%20the%20coating%20as%20it%20gives%20them%20even%20more%20of%20a%20%E2%80%9Ccoal%E2%80%9D%20appearance,%20continuing%20with%20the%20holiday%20theme.%3C/p%3E%3Cp%3EIf%20it%20gives%20you%20an%20idea%20of%20how%20these%20have%20gone%20over,%20I%20can%20tell%20you%20we%20made%20a%20double%20batch,%20of%20which%20my%20mom%20took%20maybe%201/5%20or%20so.%20And%20I%20think%20I%20am%20going%20to%20run%20out%20soon.%20The%20girls%E2%80%93and%20their%20friends%E2%80%93have%20exclusively%20only%20chosen%20these%20cookies%20to%20eat.%20In%20the%20evening,%20after%20we%20do%20all%20of%20our%20Advent%20calendars%20(I%20adore%20Advent%20calendars%20and%20collect%20them)%20they%20%E2%80%9Ctrade%E2%80%9D%20in%20the%20candy%20they%20have%20gotten%20from%20the%20calendars%20to%20instead%20choose%20a%20baked%20treat%20from%20the%20tins.%20And%20without%20fail%20it%20is%20these%20cookies%20they%20are%20going%20for.%20I%20suspect%20they%20will%20become%20a%20holiday%20regular!%3C/p%3E%3Cp%3EChocolate%20Butter%20Balls%20AKA%20Lump%20of%20Coal%20Cookies%3C/p%3E%3Cp%3EAdapted%20from%20Tate%E2%80%99s%20Bake%20Shop:%20Baking%20For%20Friends,%20Kathleen%20King%3C/p%3E%3Cp%3EFor%20cookies:%3C/p%3E%3Cp%3E3%201/2%20cups%20(440%20g)%20AP%20flour%3C/p%3E%3Cp%3E1%20cup%20(4.15%20oz/115%20g)%20Dutch%20processed%20cocoa%20powder%20(I%20used%20Valrhona),%20plus%20more%20below%3C/p%3E%3Cp%3E1%20cup%20(3.5%20oz/100%20g)%20toasted%20and%20skinned%20hazelnuts,%20finely%20ground%20in%20processor%20(measure%20by%20volume%20after%20processing%E2%80%93I%20just%20used%20Bob%E2%80%99s%20Red%20Mill%20Hazelnut%20Meal)%3C/p%3E%3Cp%3EFor%20coating:%3C/p%3E%3Cp%3EI%20used%2050%25%20Dutched%20processed%20cocoa%20powder%20and%2050%25%20confectioners%E2%80%99%20sugar.%20I%20just%20scooped%20out%20spoonfuls%20as%20I%20needed%20them%E2%80%93I%20am%20guessing%20about%203/4%20cup%20of%20each%3C/p%3E%3Cp%3EWhisk%20together%20the%20flour,%201%20cup%20cocoa%20powder,%20hazelnuts%20and%20salt.%20Set%20aside.%3C/p%3E%3Cp%3EUsing%20an%20electric%20mixer,%20beat%20the%20butter%20and%20sugars%20until%20combined%20and%20creamy.%20Scrape%20the%20sides%20and%20bottom%20of%20the%20bowls,%20and%20beat%20in%20the%20egg%20and%20vanilla.%20With%20the%20mixer%20on%20the%20lowest%20speed,%20add%20the%20flour%20mixture.%20When%20it%20is%20almost%20combined,%20add%20the%20mini%20chocolate%20chips%20and%20continue%20mixing%20until%20evenly%20combined.%20Do%20not%20over%20mix.%3C/p%3E%3Cp%3EPress%20wax%20paper%20or%20plastic%20wrap%20on%20top%20of%20the%20cookie%20dough%20and%20chill%20for%20at%20least%201%20hour,%20until%20the%20dough%20is%20firm.%3C/p%3E%3Cp%3EPlace%20the%20cooking%20racks%20in%20the%20upper%20and%20lower%20thirds%20of%20the%20oven.%20Preheat%20the%20oven%20to%20350%20F.%20Line%202%20cookie%20sheets%20with%20parchment%20or%20silicone%20liners.%3C/p%3E%3Cp%3EPinch%20off%20about%202%20tablespoons%20of%20dough%20at%20a%20time%20and%20roll%20it%20into%20a%20ball.%20Place%20the%20ball%20on%20the%20prepared%20sheets.These%20cookies%20will%20not%20spread,%20so%20you%20may%20place%20them%201%20inch%20apart,%20about%2020%20cookies%20per%20sheet.%3C/p%3E%3Cp%3EBake%20for%20about%2015%20minutes,%20rotating%20top%20to%20bottom%20and%20front%20to%20back%20halfway%20through.%20The%20cookies%20will%20look%20dry%20when%20they%20are%20done%E2%80%93some%20may%20be%20beginning%20to%20crack%20a%20little.%20Remove%20from%20them%20from%20the%20oven%20and%20let%20them%20cool%20for%205%20minutes%20on%20the%20cookie%20sheets.%3C/p%3E%3Cp%3EWhisk%20together%20Dutched%20cocoa%20powder%20and%20confectioners%E2%80%99%20sugar,%20starting%20with%20about%201/2%20cup%20of%20each.%20%20Quickly%20roll%20each%20hot%20cookie%20in%20this%20mixture%20before%20placing%20it%20on%20a%20cooling%20rack.%20When%20you%20are%20done,%20roll%20each%20cookie%20again.%20Add%20more%20cocoa%20powder%20and%20powdered%20sugar%20if%20needed,%20keeping%20the%20ratio%201:1.%20Cool%20completely.%3C/p%3E){kind=link}
