The only way I could make Arjun to eat bananas is to incorporate them in either in muffins or milkshakes, other wise he runs a mile upon hearing that very word. I have to let 2 or 3 of the bananas to become over ripe from the bunch that DH usually brings home on weekdays for this purpose alone. Also I had been baking this banana bread quite often now-a-days as I get amazing results always. I do not know about my boys but I had become quite bored of making them so often. In fact I had become so thorough that I could them bake while I sleep walk. When I googled for a recipe with banana that also has chocolate in it to have for breakfast or send it to school for my boys, I landed on who else but Nigella’s space. I came to know of her only after I started baking through the Blogging world. I have heard so many raving reviews about her recipes. This particular recipe sounded so easy and quick that I decided to give it a try. Also this is the first recipe that I’m trying out from her space and I must say that I’m mighty impressed with the result. I usually follow any baking recipe to the T, as I’m scared of ruining the whole recipe and if you have kids at home while you are trying out any bake for a first time it only becomes more difficult as they visit the kitchen often wishing to know the status. But this recipe is so fool proof and a definite keeper and you can play with the quantity without worrying and get the best result every time. Method: Preheat the oven to 200 Deg C. Grease the muffin pans with oil or butter. I used paper liners and still greased the insides with oil. Sieve together flour, baking soda, cocoa together and keep it aside. Mash the bananas well. I used a mixer for this. After that the add eggs, vegetable oil and the sugar one by one while mixing well after each addition. To the wet mixture add the sieved dry mixture little by little and keep mixing with a spatula. You will get a thick batter. Spoon this mixture into the prepared muffin cases and bake for 15-20 mins or till a skewer inserted comes out clean. Transfer to a wire rack and let it cool completely. Enjoy as your morning breakfast with a glass of milk or pack for your kids snack box. For a handful of ingredients and the simple method, these muffins simply rocked. Verdict: As you can see for yourself these muffins were super soft and moist and raised so well. The aroma that it spread while baking was just unforgettable. My boys loved it so much that I had to bake another batch the next day itself for their friends as they loved it very much. I was surprised to see a thank you note and many a requests to send these muffins daily to school from one of Arjun’s classmates.

Notes: You will get good flavor if the bananas are very ripe.You can also use the usual white sugar but the dark color will not be possible and U will get a light brown colored muffins.You can add vanilla essence too but I left it out as that might give it a cake like feel.I inserted a sharp knife and run it around the insides of the paper liners and the muffins just came off easily from their cases. Mine were done in exactly 20 mins but I baked for another 5 mins to get a slightly crisp upper crust as my boys love them very much. This is off to my Let’s Cook : Scrumptious Breakfasts.
