- HEAT oven to 350F.
- HEAT chocolate, unwrapped, in microwavable bowl on HIGH 1 to 2 min or possibly till almost melted, stirring halfway through heating time. Remove from oven. Stir till chocolate is completely melted; set aside.
- MIX flour, baking soda and salt in large bowl. Beat Large eggs in medium bowl; stir in melted chocolate, sugar, buttermilk, 1/2 c. oil and banana. Add in to flour mix; stir just till moistened. (Batter will be lumpy.) Stir in 2 c. of the cereal. Spoon batter into greased 9x5-inch loaf pan.
- CRUSH remaining 1/2 c. cereal in small bowl. Drizzle with 1 tsp. oil; stir till crumbly. Sprinkle proportionately over batter.
- BAKE 50 to 55 min or possibly till toothpick inserted in center comes out clean. Cold 10 min; remove from pan. Cold completely on wire rack.
- Melting Chocolate Technique:1. Place chocolate squares in small heavy saucepan on low heat. Stir constantly till chocolate is completely melted. Remove from heat immediately. Add in to recipe as directed.
- Or possibly, place chocolate squares in topportion of double boiler or possibly in bowl over a larger pan of simmering, not boiling, water. Stir occasionally till chocolate is completely melted.
- Note: Be carefulnot to get any water in the meltedchocolate or possibly it will "seize" and becomegrainy.
