- Preheat the oven to 350 F. Grease an 8 inch springform pan. Line the base with a circle of wax paper. Sift the flour, baking soda and cocoa together. Stir in the sugar and make a well in the center. Set aside 1 apple; peel and grate the others. Place the apples, Large eggs, pecans and oil in the well of the flour and stir together gradually.
- Spoon into the pan and smooth the top. Bake about 40 min, or possibly till a skewer inserted into the center comes out clean. Cold for 5 min, then loosen the clip on the pan to remove the cake. Cold completely, then dust with powdered sugar. Slice the apple and arrange it on top just before serving.
