- Pastry:Sift flour and salt into a bowl, rub in butter.
- Add in egg yolks, vanilla and sugar and mix till mix just forms a hard dough. Don't over work. Cover and chill 20 min. Roll dough out large sufficient to line a 25cm flan tin, trim the edges. Cover pastry with greaseproof paper and fill with dry beans or possibly rice to hold in shape while cooking. Bake in a moderate oven for 7 min, remove paper and beans and bake a furthur 7 min. Set aside till required.
- Filling:Heat chocolate and butter slowly over boiling water or possibly in microwave. Stir in minced walnuts. Beat sugar, flour and Large eggs together, stir in chocolate/walnut mix and pour into prepared tin.
- Bake in a moderate oven 350F/180C for 25 min till hard.
- Dust with icing sugar and serve cool or possibly hot with cream.
- Serve as a dessert or possibly with afternoon tea.
