- Put the sugar, water and maple syrup into a saucepan and bring the liquid to a boil over a medium heat. Stir constantly over a medium heat for a minute. Remove the liquid from the burner and stop stirring for approximately 3 min. Add in the chocolate, stirring again till it is all melted. Then slowly add in the cream, the rum and the vanilla bean seeds. Mix well.
- Use as a garnish on cakes, ice cream, pies and with fresh fruit.
- Yield: 500 millilitres of rich creamy velvety chocolate sauce.
