Chive and Pine Nut Dip

  • 3/4 c coarsely chopped fresh chives
  • 2 tbsp olive oil
  • 1/4 cup pine nuts (1 oz)
  • 1 cup marscapone cheese
  • 2 tbsp grated asiago cheese

  1. Puree 3/4 cup chives with oil in blender until smooth, then chill 1 hour.
  2. While chive oil paste stands, you can put oven racks in upper position and preheat to 375 degrees, place pine nuts in a shallow baking pan on lower rack until golden, shaking pan throughout browning process. Cool, then coarsely chop.
  3. Add the chive oil paste to the pine nuts and then whisk it together with the marscapone cheese and asiago until smooth. Transfer to a shallow bowl when ready to serve. It is lovely served with slices of ciabetta bread that have been lightly toasted in the oven, or with crudités.
