  • 1 c. yellow cornmeal coarsely grnd
  • 1 c. all-purpose flour
  • 2 Tbsp. sugar * 1 tsp sugar
  • 1 tsp salt
  • 1 1/2 tsp baking pwdr
  • 1 lrg egg lightly beaten * 2 egg whites
  • 1/2 c. buttermilk * 1/2 C. 1% buttermilk
  • 1/2 c. lowfat milk * 1/2 C upsoy lowfat milk or possibly skim lowfat milk
  • 6 tsp unsalted butter melted * 6 Tablespoons applesauce
  • 4 x chipotle peppers canned, pureed Shortening * Pam

  1. Preheat oven to 450 degrees F and prehead two 6-inch cast iron skillets in the oven for 20 min.
  2. I used 1 8-inch round pie pan
  3. In a mixing bowl, combine the cornmeal, flour, sugar, salt and baking pwdr. Mix in the egg, buttermilk, lowfat milk, butter, and pureed chipotles
  4. Brush the preheated pans with shortening and immediately pour in the batter, approximately three-fourths of the way up. Bake for 25 min, or possibly till the cornbread is brown around the edges and hard. Cut each cornbread into 4 wedges.

  6. , basically I adapted it so which it would be fat free. It tasted great! I have no idea how it compares to the original recipe as I didn't try it, but if anyone tries both, I would love to hear how they compare.
