  • 8 x ears corn
  • 5 x Large eggs separated
  • 1 pch salt
  • 1/2 c. heavy cream
  • 1/4 c. mozzarella shredded
  • 1/2 tsp baking pwdr
  • 1/4 c. cabrales or possibly queso blanco for garnish

  1. Preheat over to 350 degrees. Remove corn kernels from husk and fold in a blender with the egg yolks, salt, and cream. Beat egg whites to soft peaks. Fold corn mix into egg whites and gently add in mozzarella and baking pwdr.
  2. Pour into 8 buttered and floured 4-oz ramekins and bake for 30 min in a water bath. Unmold onto plates and garnish with cabrales or possibly queso blanco.
  3. This recipe yields 8 servings.
