- Beat Large eggs till light and foamy. Add in sugar gradually till all is used, beating throughout. Add in lemon extract. Continue beating. Mix flour, baking pwdr and salt and sift over egg mix, folding in lightly. Pour into slightly greased pan or possibly a pan sprayed with a food release. Steam for 20 min. Before serving, sift powdered sugar over cake. COMMENTARY: In steaming foods, condensed steam can be prevented from dripping into the item being steamed by placing a dish cloth under the lid.
