- Heat 1 Tbsp. sesame oil in heavy medium skillet over medium- high heat. Add in chopped chili and saute/fry 1 minute. Add in garlic and saute/fry 1 minute.
- Remove from heat. Add in soy sauce, rice vinegar and healthy pinch of sugar and stir to blend. Strain through fine sieve into small bowl, pressing on solids with back of spoon. (Soy sauce mix can be prepared 1 day ahead.
- Chill.) Heat 3 Tbsp. vegetable oil in heavy large saucepan over medium heat. Add in minced shallots and saute/fry 2 min. Add in sliced shiitake mushrooms and smoked pork and saute/fry 6 min. Add in rice and stir 1 minute. Add in 3 c. chicken stock and bring to simmer, stirring occasionally. Reduce heat, cover and simmer till rice is just tender but still hard to bite, stirring occasionally, about 20 min. Add in minced mustard greens and cilantro and stir 1 minute. Fold in soy sauce mix.
- Add in more chicken stock by Tbsp. if rice is dry. Divide risotto among bowls and serve.
