To conclude, for the last day it is Chilli cheese paratha. Even though Paneer parathas are quite common, I never imagined other cheeses to go well in this. But surprisingly mozzarella ( esp with green chillies ) was too good. I never added any other spices to this, kept it very simple. A touch of salt from the cheese and the stinging chilli bite went hand in hand. I also added some greens of the scallions to give an additional accent to the bite. Try this for yourself and enjoy.

For the Dough

Instructions

Mix all the ingredients under dough in a bowl. Then gradually add little water and knead it into a soft dough. Finally add a Tbsp of oil and mix it over the dough.

Cover it with a damp cloth and let it rest for a minimum of half an hour.

Mix the cheese filling just before you make the parathas.

Divide the dough and roll it out like as you would for rotis. Fill with the cheese filling, fold and again roll.

Heat the gridle or tawa and cook these rolled out doughs on both sides flipping it consistently to get even brown spots.

Notes

Sometimes the cheese oozes out of the parathas while cooking. So make sure not to roll it out very thin.

Also reduce or add chillies as per your preference.
