Chili, Fall Days and Football

Fall means football and in the Hampton Roads area it means college football. There are a few to choose from but my favorite is Old Dominion University. Last year I went several times and really enjoyed myself. This year, I recently had the opportunity to go to an Old Dominion University game. Even though we didn’t win, I had a very good time. It was a nice fall evening, the air was a little crisp. It was exhilarating watching them go back and forth with the ball. Fall is my favorite time of year. This reminds me of sweaters, apple pie and chili. All those wonderful things that are so comforting to us this time of year. I am beginning to see the pale leaves cover the gardens and roads of our area.

Even though they didn’t win, they played hard.

Here are the ingredients.

Brown the ground beef in a skillet until it is no longer pink. Remove the beef to a bowl and leave about 2 tablespoons of grease in the bottom of the pan.

Add onions celery, tomato, and garlic. Cook until they start to sweat. Add the beef and cook another 5 minutes.

Pour ingredients into a crock pot. Add the chili beans and beef stock. Stir to combine. Cook on low for 4-6 hours. Serve with crackers.
