- Preheat oven to 450 degrees. Peel potatoes and halve lengthwise. Cut into 1/4-inch pcs.
- Arrange potatoes on baking sheet. Add in oil, salt, and pepper. Stir to coat potatoes.
- Roast potatoes, stirring occasionally, till golden brown, about 15 min.
- Meanwhile, combine mayonnaise, lime juice, and chili pwdr in a medium bowl. Add in potatoes. Stir to coat potatoes. Serve warm or possibly at room temperature.
- VARIATION: For a low-fat version, use fat-free lowfat sour cream instead of the mayonnaise.
