- Skin the breast. In a frying pan heat extra virgin olive oil on medium heat and brown the chicken. Remove from pan. Pour wine into pan stirring to loosen any browned bits of chicken. Add in bay leaf and other seasonings. Simmer till liquid is reduced by almost half. Remove bay leaf. Return chicken to pan. Cover with tomatoes. Cover pan and simmer for 45 min till chicken is cooked and tender. Serve with rice and a green salad.
