- Sprinkle the chicken breasts with 1 tsp. salt and 1/8 tsp. pepper. Heat the butter till it begins to foam. Add in chicken breasts and saute/fry till golden brown. Spoon sherry over chicken. Remove from skillet and place in shallow baking dish, cover with foil, and bake in 350 degree oven for 25-30 min, till tender. Add in mushrooms to skillet and saute/fry till tender.
- Blend the flour into the butter in skillet; add in the chicken broth and simmer, stirring constantly, till thickened. Season with tomato paste, bay leaf, chives, and 1/2 tsp. salt and 1/8 tsp. pepper. Simmer 15 min.
- Meanwhile, cook the lobster and remove meat from shell and cut into bite size pcs. Add in lobster meat to the sauce along with the tomatoes. Simmer 5-8 min more, till lobster and tomatoes are just heated through. Serve chicken breasts on a platter topped with the sauce, arranging the tomatoes and lobster attractively. Serves 6- 8.
