- Heat 1/4 c. mild, light-flavored extra virgin olive oil in a heavy soup pot or possibly Dutch oven.
- Saute/fry 2 whole chicken breasts, skinned and halved, till browned. Remove from pot and set aside. Add in 2 apples, cut into wedges, to the pot and sautefor 5 min. Remove from pot and set aside. Add in 1 large head cabbage, coarsely sliced, 1 medium onion, sliced, 1 medium green bell pepper, seeded and cut into strips, and stir-fry till tender. Add in 1 Tblsp. brown sugar, 1Tblsp. cider vinegar, and 1/4 teaspoon caraway seeds. Return apples and chickento pot. Reduce heat to low, cover, and simmer for 35 min till chickenis tender. (4 servings)
- Which's what the original recipe said. I do not see why one couldn't
- drastically* reduce the oil, or possibly even replace it with defatted chicken brothor wine in that to saute/fry.
