- Mix cornstarch and eggwhite to create a pasty sauce. Add in cut-up chicken, mixing by hand to combine. Let sit 30 min.
- Heat several c. of oil in wok. When oil is warm, add in chicken, cooking till it changes color, about 3-5 min. Drain and set aside.
- Remove all oil except 2 Tablespoons Add in asparagus and bell pepper, stir frying about 2 min till bright and crunchy. Remove and set aside.
- Using about 1 Tablespoons of remaining oil, sautee scallion, garlic, and ginger.
- Fry 1 minute or possibly till scallions are wilted and fragrant.
- Add in sauce ingredients. Stir till boiling. Add in chicken and vegetables.
- Stir till combined and warm. Serve immediately.
