This is a fairly easy recipe that's quick enough for week-night company. We keep all of the ingredients ready in the pantry and freezer. Serve it with a green salad, crispy bread and a simple dessert and expect rave reviews.

- Start a pot of water for the pasta.
- Put some olive oil in the bottom of a skillet and turn it on medium.
- Brown the chicken lightly.
- Drain the marinade from the artichokes into the skillet.
- Add the broth and all other ingredients except the artichokes and cornstarch solution to the skillet and bring it to a simmer.
- Simmer until the chicken is done.
- Add the cornstarch and simmer to thicken.
- Gently fold the artichokes into the dish.
- Drain the pasta and place on a large serving platter.
- Pour the chicken mixture onto the pasta.
- Sprinkle with the parmesan cheese.
