,%20and%20I%20knew%20I%E2%80%99d%20need%20to%20give%20it%20a%20whirl%20at%20some%20point,%20to%20see%20what%20all%20the%20fuss%20about%20fried%20chicken%20and%20waffles%20being%20a%20%E2%80%9Cperfect%20marriage%20of%20sweet%20and%20savory%E2%80%9D%20was%20about.%20But%20for%20some%20reason%20I%20kept%20putting%20it%20off.%20I%20think%20most%20of%20us%20have%20an%20aversion%20to%20home-frying.%20It%20seems%20the%20grease%20manages%20to%20get%20everywhere,%20despite%20using%20fancy%20splatter%20screens.%20And%20Chris,%20well,%20he%E2%80%99d%20rather%20not%20see%20the%20pile%20o%E2%80%99%20shortening%20in%20solid%20form%20before%20it%20melts%20its%20way%20to%20a%20hot%20liquid%20bed%20of%20fry-ready%20goodness.%20After%20all,%20shortening%20(or%20even%20lard)%20is%20truly%20the%20only%20real%20way%20to%20fry%20chicken,%20though%20other%20methods%20work%20just%20fine%20in%20a%20pinch.%3C/p%3E%3Cp%3ESpeaking%20of%20other%20methods,%20I%20made%20fried%20chicken%20a%20while%20back%20and%20posted%20it%20on%20here.%20It%20was%20a%20different%20take%20on%20your%20traditional%20Southern%20style%20dish%20%E2%80%93%20not%20brined%20in%20buttermilk%20and%20fried%20in%20shortening,%20rather%20it%20was%20coated%20in%20matzo%20meal%20(I%E2%80%99m%20not%20kidding)%20and%20fried%20in%20a%20vat%20of%20canola%20oil.%20It%20was%20amazing.%20It%E2%80%99s%20not%20a%20bad%20way%20to%20go%20if%20you%20don%E2%80%99t%20have%20time%20to%20soak%20chicken%20in%20buttermilk,%20or%20for%20this%20dish%20in%20particular,%20if%20frying%20chicken%20and%20making%20waffles%20(which%20also%20involves%20cooking%20sweet%20potatoes%20here)%20is%20a%20bit%20too%20much,%20even%20for%20a%20weekend.%3C/p%3E%3Cp%3EMe?%20I%20decided%20to%20make%20this%20specific%20dish%20at%20the%20last%20minute%20before%20heading%20out%20to%20wine%20country%20for%20the%20day%20(it%E2%80%99s%20a%20tough%20life,%20but%20someone%20has%20to%20do%20it%E2%80%A6),%20and%20in%20the%20midst%20of%20getting%20ready%20to%20leave,%20I%20hustled%20down%20to%20Faletti%E2%80%99s%20and%20grabbed%20a%20whole%20chicken,%20some%20buttermilk,%20and%20a%20couple%20of%20other%20necessities,%20threw%20it%20all%20down%20on%20the%20counter,%20cut%20the%20chicken%20into%208%20pieces%20with%20the%20quickness%20I%20harnessed%20from%20my%20dad%E2%80%99s%20teachings,%20and%20tossed%20that%20sucker%20into%20buttermilk%20until%20we%20got%20home%20later%20that%20night.%20I%20already%20had%20some%20mashed%20sweet%20potatoes%20in%20the%20fridge,%20which%20is%20what%20inspired%20me%20to%20cook%20this%20in%20the%20first%20place%20(and%20they%20had%20goat%20cheese%20in%20them,%20which%20imparted%20a%20tasty%20flavor%20into%20the%20waffles!).%3C/p%3E%3Cp%3EThe%20recipe%20is%20definitely%20intended%20to%20be%20eaten%20in%208%20servings%20(maybe%20less%20if%20the%20wing%20or%20drumstick%20portions%20aren%E2%80%99t%20enough%20for%20ya).%20It%E2%80%99s%20rich,%20it%E2%80%99s%20hefty,%20and%20it%20is%20perfect%20when%20you%20dip%20back%20and%20forth%20between%20maple%20syrup%20and%20Frank%E2%80%99s%20hot%20sauce.%20The%20sweet/savory%20thing?%20I%20totally%20get%20it%20now.%20Which%20is%20probably%20why,%20after%20Sunday%20afternoon,%20I%20had%20to%20figure%20out%20another%20dish%20for%20dinner%20that%20night,%20as%20someone%20in%20this%20house%20managed%20to%20eat%20each%20and%20every%20leftover%20piece%20of%20chicken%20straight%20from%20the%20fridge,%20with%20a%20tiny%20crumb%20trail%20left%20as%20evidence%20from%20the%20fridge%20to%20island.%20The%20advantage?%20Lots%20of%20leftover%20waffles%20that%20resulted%20in%20breakfasts%20and%20even%20a%20couple%20of%20dinners%20over%20the%20upcoming%20weeks.%20The%20disadvantage?%20I%E2%80%99m%20feeling%20another%20urge%20to%20make%20it%20again,%20fried%20mess%20and%20all,%20because%20I%20only%20ate%20one%20whole%20piece.%20Decisions,%20decisions.%3C/p%3E%3Cp%3EButtermilk-Fried%20Chicken%20n%E2%80%99%20Sweet%20Potato%20Waffles%3C/p%3E%3Cp%3Ebarely%20adapted%20from%20Bon%20Appetit,%20October%202011;%20serves%208%3C/p%3E%3Cp%3Eentire%20recipe%3C/p%3E%3Cp%3Efried%20chicken%20only%3C/p%3E%3Cp%3Ewaffles%20only%3C/p%3E%3Cp%3Eingredients%3C/p%3E%3Cp%3Ewaffle%20iron%3C/p%3E%3Cp%3Einstructions%3C/p%3E%3Cp%3EMarinate%20chicken%3C/p%3E%3Cp%3EWhisk%20first%206%20ingredients%20in%20a%20large%20bowl.%20Add%20chicken;%20cover%20and%20chill%20for%20at%20least%208%20hours%20or%20overnight.%3C/p%3E%3Cp%3EFry%20chicken%3C/p%3E%3Cp%3EMelt%20vegetable%20shortening%20in%20a%20large%20cast-iron%20skillet.%20Arrange%20a%20deep-fry%20thermometer%20in%20skillet%20so%20bulb%20is%20submerged.%20Heat%20over%20medium%20heat%20until%20shortening%20reaches%20325%20F.%20While%20this%20is%20getting%20to%20the%20correct%20temperature,%20prepare%20waffle%20mix%20(see%20below).%3C/p%3E%3Cp%3EMeanwhile,%20mix%20flour,%20garlic%20powder,%20onion%20powder,%20and%20cayenne%20in%20a%20large%20brown%20paper%20bag.%20Drain%20chicken,%20leaving%20some%20herbs%20still%20clinging.%20Season%20generously%20with%20salt
