Chicken Tenders with Peanut Dipping Sauce
- 1 pound chicken tenders
- MARINADE:
- 3 Tablespoons low-sodium soy sauce 1 teaspoon sesame oil 1 teaspoon ground ginger
- PEANUT SAUCE
3 Tablespoons smooth peanut butter 2 Tablespoons low-sodium soy sauce 1½ Tablespoons water ½ teaspoon ground ginger 1 teaspoon sugar ½ teaspoon Chili garlic sauce
Place the chicken in a shallow pan. In a small bowl mix the soy sauce, sesame oil, and ginger, pour over the chicken. Let marinate for 10 minutes, or covered in the refrigerator overnight. In a small bowl, stir the peanut butter to soften. Add the soy sauce, the water, the ginger, sugar, and chili garlic sauce, and stir until smooth. Set aside. Heat a large grill pan over medium-high heat for about 3 minutes or until it is smoking. Remove chicken from marinade & discard the marinade. Cook the tenders, turning once, for about 3 minutes per side, or until cooked through. Serve with dipping sauce 3.2.2499
It’s a peanut butter thing.
After that delicious Thai Beef dish I made for Hunter last week, I had to try a chicken dish using peanut butter.
I wasn’t interested in a satay so I stuck with the Thai theme and came up with this fantastic peanut dipping sauce.
The other day, I was bored at work and started writing down different types of dishes I wanted to try out. And I gotta admit, I had a few failures. There was this concoction I made using ginger beer. I spit it out and threw in the towel. I did make some great clover leaf biscuits and a fantastic cinnamon sugar, pull apart bread using Parker House frozen rolls. I would share them with everyone, but the photos sucked big time. Someday, I will make them again and post them on the blog.
Back to this chicken dish.
This one was a success and disappeared rather quickly. Whether you dip these in a peanut butter sauce, or be like the hubby and skip the sauce cause, well, that’s how he is, these are tasty either way.
Thanks for stopping by and have a great day.
