  • 1 3 1/2 to 4 lbs. chicken -- cut up
  • 2 pounds potatoes
  • 1 large onion
  • butter
  • salt
  • pepper
  • water

Инструкции

  1. Prepare the bird and cut up. Peel two pounds of potatoes and cut up roughly.
  2. Slice an onion. Arrange in a pot alternate layers of potatoes, onion and chicken,sprinkling each layer with salt and pepper and dot liberally with butter.
  3. Add about three gills ( wine glasses) of water and cover tightly.
  4. Simmer very gently for two or three hours, or until the chicken is tender.If necessary, add a little hot water occasionally to prevent burning.
