Cilantro Dressing (recipe follows) 1 (15 ounce.) can garbonza beans, liquid removed 1 sm. red onion, finely sliced and separated into rings

1 (2 1/4 ounce.) can sliced ripe olives, liquid removed 1 bunch spinach (about 3/4 lb.) 3-4 c. chicken, cooked, cut in 1/2 inch wide strips

1. Prepare Cilantro Dressing and add in garbonza beans, onions and olives. Mix gently till blended. Cover and chill at least 4 hrs or possibly till next day. Wash spinach leaves, pat dry and chill at least 30 min. Lightly mix chicken into garbonzo mix. Arrange spinach in rimmed platter or possibly bowl and top with chicken salad.
