I am going to tell you a secret. When you make this dish, there is no need to even mention the word zucchini. Just let them eat it first, then surprise them with the zoodles.
Somehow the jokes was on me when I was preparing this dish.
After chopping all the ingredients, and getting the dish started, I noticed that my upper lip started to get moist. I swiped my finger across my nose and then washed my hands. But unfortunately, it was too late.
Yes, there was an incredible burning sensation on my upper lip. I was on Google trying to find home-made remedies to get rid of the incredible hot pepper burn. I literally dipped a towel into a cup of milk and compressed it onto the burn area. This lasted approximately 15 minutes. But nothing could stop me from eating this dish, and in between milk soaks, I was sopping up every last bite of this dish.
A double April fool’s joke. One on me, and one on the family, who had no idea the noodles were spiralized zucchini.

½ Tablespoon oil 6 ounces boneless skinless chicken breast thins, cut into bite sized pieces 1 zucchini, spiralized 1 carrot julienned 2 eggs ½ cup fresh bean sprouts 2 scallions sliced ¼ sliced white onion ⅛ cup cilantro, roughly chopped 1 chili pepper, chopped optional: peanuts
sauce ¼ cup ketchup, reduced sugar 2 Tablespoons fish sauce 2 Tablespoons Splenda brown sugar blend ( or your favorite sweetener) 1 clove, garlic, minced 1 teaspoon peanut butter juice of 1 lime ½ teaspoon crushed red pepper flakes 1 teaspoon soy sauce
Season chicken with salt and pepper to taste; set aside. In a skillet on medium-high heat,add the oil. In a small bowl, whisk together all sauce ingredients and set aside Once the oil is hot, cook chicken, stirring throughout until cooked through (about 4 to 6 minutes). Transfer chicken to a bowl and set aside. In a separate pan, over medium heat, crack the eggs and fry for a bout a minute, then break it up with a spoon. Set aside. In the pan that you cooked the chicken, add the onions and bean sprouts. saute for about 5 minutes. Add the carrots, the chicken and sauce. Fold in the scrambled eggs. Add zoodles and toss to coat in the sauce. Stir in scallions and cilantro. Garnish with peanuts if desired. 3.2.2925
