Make this piled-high Chicken Mufuletta, a New Orleans favorite, filled with stacks of deli chicken, olives,and cheese.

Chicken Muffuletta Recipe

1 jar (7 ounces) pitted Kalmata olives, drained 1 jar (7 ounces) pitted Bistro Olive Blend, drained ½ cup olive oil 1 (10-inch) round loaf of bread 3 tablespoons extra-virgin olive oil 1 pound deli sliced chicken 6 pieces cooked center cut bacon 12 slices thin Provolone cheese

Place the green olives in a food processor and pulse until they have been chopped into small chunks. Remove the green olives and repeat with the black olives. Place the pulsed green and black olives into a large bowl. Add the shallots and garlic to the food processor and blend. Add the carrots and parsley, and pulse until blended. Add the olives, carrot mixture into a bowl. Combine oil, vinegar, and oregano and add to the bowl with the olives and stir until blended. Transfer the olive salad to a colander and drain. This recipe makes extra olive spread and can be stored in the refrigerator for at least a week. To make the muffuletta, using a serrated knife, slice the loaf of bread in half horizontally. Scoop out the soft bread from both halves, leaving a 1-inch-thick shell. Place 1 cup of the drained olive salad on a cutting board. Using a chef’s knife, roughly chop the salad until all the vegetables are the size of peas. Spoon half of the chopped olive salad onto the bottom bread shell and spread evenly. Top with the chicken, turkey bacon, cheese, and remaining olive salad. Cover with the top bread shell. Cut crosswise into halves or quarters. You can also toast or press the whole sandwich in the oven or under a sandwich press. 3.2.2708

My inspiration for this was my big girl, who loves a great olive spread.

Anyway, this beast was created before m low carb eating plan which began about two weeks ago. The good news is I can have everything BUT the bread. Even better is olives are free on this plan.

Yup you got it. Next time I can either roll the deli chicken with the cheese and olive spread, or use butter lettuce as my “bread”. It’s portable, delicious and yummy to eat.even if you are not going on a picnic.
