%3C/p%3E%3Cp%3EJune%2019,%202015%20by%20vikalinka%20Leave%20a%20Comment%3C/p%3E%3Cp%3EEnglish%20summer%20is%20not%20something%20you%20can%20count%20on.%20Sadly,%20it%E2%80%99s%20not%20as%20dependable%20as%20London%20buses,%20Big%20Ben%20or%20food%20poisoning%20from%20the%20local%20kebab%20stand.%20%20Summer%20here%20comes%20and%20goes%20as%20it%20wishes,%20no%20explanations%20or%20apologies%20given.%20Truly%20hot%20days%20are%20more%20rare%20than%20we%20like%20to%20admit%20yet%20we%20go%20on%20buying%20suntan%20lotions%20and%20charcoal%20for%20barbecues%20in%20desperate%20hope%20that%20once%20the%20weekend%20is%20here,%20we%20will%20firmly%20plant%20ourselves%20in%20our%20tiny%20gardens,%20responsibly%20covered%20in%20SPF%2015,%20%20with%20a%20sweet%20drink%20in%20hand.%20And%20whenever%20a%20sunny%20day%20graces%20us%20with%20its%20presence,%20it%E2%80%99s%20lovelier%20than%20you%20can%20ever%20imagine%20and%20just%20like%20that%20our%20resentment%20disappears%20quicker%20than%20a%20pitcher%20of%20Pimms.%3C/p%3E%3Cp%3EI%20spent%20my%20childhood%20in%20Russia%20with%20much%20more%20predictable%20and%20pleasant%20summers%20%E2%80%93%20at%20least%20that%E2%80%99s%20what%20my%20memories%20seem%20to%20tell%20me.%20They%20however%20might%20be%20quite%20as%20reliable%20as%20I%20recall%20since%20my%20family%20wasn%E2%80%99t%20always%20there,%20having%20spent%20at%20least%20one%20month%20lazing%20on%20the%20shores%20of%20the%20Black%20Sea%20almost%20every%20year,%20which%20might%20be%20why%20I%20remember%20so%20many%20sand-and-sea%20filled%20days%20interspersed%20with%20great%20food.%3C/p%3E%3Cp%3EThe%20last%20holiday%20I%20remember%20well%20was%20taken%20in%20Georgia%E2%80%A6%203%20years%20before%20the%20Soviet%20Union%20collapsed%20and%20Georgia%20became%20a%20separate%20country.%20I%20was%20in%20my%20teens%20and%20a%20family%20holiday%20didn%E2%80%99t%20hold%20as%20much%20appeal%20as%20it%20does%20for%20a%20child%20but%20I%20still%20remember%20my%20dad%20making%20a%20case%20for%20it%20by%20trying%20to%20convince%20me%20and%20my%20brother%20that%20it%20might%20be%20our%20last%20opportunity%20to%20visit%20Georgia%20before%20it%20is%20no%20longer%20a%20part%20of%20our%20country.%20We%20finally%20surrendered%20and%20off%20we%20went.%20To%20this%20day%20that%20trip%20remains%20one%20of%20the%20funnest%20memories%20of%20our%20family%20time%20together.%3C/p%3E%3Cp%3EThis%20Chicken%20in%20Garlic%20Walnut%20Sauce%20or%20Chicken%20Satsivi%20in%20Georgian%20is%20a%20well-known%20and%20loved%20dish%20in%20Russia.%20I%20adapted%20the%20recipe%20from%20one%20of%20my%20favourite%20cookbooks%20so%20it%20might%20be%20ultra-authentic,%20but%20it%E2%80%99s%20nonetheless%20absolutely%20fantastic.%3C/p%3E%3Cp%3EChicken%20Satsivi%20is%20an%20incredible%20dish%20for%20hot%20and%20sticky%20summer%20nights%20that%20will%20satisfy%20your%20craving%20for%20comfort%20food%20but%20will%20not%20leave%20you%20feeling%20stuffed%20and%20heavy.%20The%20sauce%20base%20is%20made%20of%20herbs,%20spices%20and%20walnuts%20and%20is%20slightly%20reminiscent%20of%20Indian%20Korma%20but%20has%20a%20completely%20different%20flavour.%20My%20entire%20family%20immediately%20fell%20in%20love%20with%20the%20dish%20while%20kids%20demanded%20to%20know%20what%20was%20in%20the%20sauce.%20It%20tends%20to%20leave%20a%20lasting%20impression.%20If%20you%20have%20any%20experience%20cooking%20with%20curry%20pastes%20you%20will%20find%20this%20one%20just%20as%20easy.%3C/p%3E%3Cp%3EServe%20it%20with%20rice,%20flat%20bread%20%E2%80%98lavash,%E2%80%99%20(or%20naan%20if%20it%E2%80%99s%20easier%20to%20find)%20and%20a%20simple%20fresh%20salad.%20I%20remember%20Georgian%20cuisine%20being%20heavy%20on%20grilled%20meat,%20fish,%20herbs,%20spices%20and%20vegetables.%20It%E2%80%99s%20healthy,%20simple%20and%20delicious.%3C/p%3E%3Cp%3EIn%20a%20bowl%20of%20a%20food%20processor%20or%20a%20blender%20combine%20walnuts,%20cilantro,%20chillies,%20garlic,%20lemon%20juice%20and%20%C2%BD%20cup%20of%20chicken%20stock%20and%20process%20until%20you%20have%20a%20smooth%20paste.%20Set%20aside.%20Heat%20a%20tablespoon%20of%20olive%20oil%20in%20a%20large%20pan%20and%20brown%20seasoned%20with%20salt%20and%20pepper%20chicken%20pieces%20on%20both%20sides%20over%20medium%20heat.%20Work%20in%20batches%20to%20avoid%20overcrowding.%20Remove%20browned%20chicken%20on%20a%20plate%20and%20set%20aside.%20Discard%20all%20but%202%20tablespoons%20of%20fat%20from%20the%20pan,%20then%20add%20chopped%20onion%20and%20cook%20for%205%20minutes%20over%20low%20heat%20until%20tender%20but%20not%20coloured.%20Add%20flour%20and%20stir,%20then%20add%20chicken%20stock%20gradually%20while%20stirring%20to%20combine%20and%20turn%20the%20heat%20up%20to%20bring%20to%20a%20boil,%20then%20turn%20it%20down,%20add%20the%20satsivi%20paste%20and%20stir%20to%20combine.%20Return%20chicken%20to%20the%20pan%20with,%20bring%20the%20sauce%20to%20a%20boil,%20then%20turn%20heat%20down%20and%20simmer%20for%2030%20minutes%20uncovered%20until%20th
