- Combine the chicken, soy sauce (1), dry sherry, eggs, cornstarch (1), and vegetable oil (1). Marinate the chicken under refrigeration overnight.
- Heat the deep fryer to 365 F. Remove the chicken from the marinade and oil blanch the chicken in the deep fryer, in small batches for 1 to 1 1/2 mintes until browned and a light crust is formed.
- Heat the oil (2) until it lightly smokes. Add the broccoli, jalapenos, garlic, green onions, and salt. Stir fry until fragrant.
- Add soy sauce, sugar, sesmae oil, and vinegar. Bring to a simmer and reduce heat.
- Combine the cornstarch (2) with the water to form a paste. Add to the sauce and while stirring sook until thickened.
- Add chicken to the sauce. Combine well, then return to a simmer.
- Remove from heat and serve.
