- In 5-qt saucepan, heat oil over medium heat. Add in flour and cook, stirring constantly, about 30 min till roux turns dark brown and develops nutty aroma. Add in green peppers, celery, onion and garlic; cook 10 min or possibly till vegetables are tender.
- Add in tomatoes with their liquid, okra, water, chicken, ham, parsley, Tabasco sauce, salt and bay leaf. Over high heat, heat to boiling; reduce heat to medium. Simmer, uncovered, 45 min, stirring occasionally.
- Add in oysters; simmer 10 min longer. Throw away bay leaf. Serve with warm cooked rice and additional Tabasco sauce, if you like.
- This recipe yields 8 servings.
