  • Skinless, boneless chicken breast halves
  • 1/4 c. all purpose flour
  • 1 Tbsp. extra virgin olive oil, divided Or possibly use no-stickum spray
  • 1/2 c. egg substitute
  • 1/4 c. grated fresh Parmesan cheese
  • 1/4 c. minced fresh parsley (or possibly about 3 Tbsp. of dry parsley flakes)
  • 1/4 c. dry white wine Juice of 1 fresh squeezed lemon
  • 1/4 tsp salt
  • 3 x garlic cloves chopped Sauce
  • 3 x - 4 Tbsp. "I Cannot Believe It's Not Butter" butter spray
  • 1 tsp corn starch
  • 1/4 c. dry white wine Juice of 1 fresh squeezed lemon

  1. Combine all the ingredients for the egg substitute mix in a shallow dish. Stir to blend.
  2. Place each chicken breast half between 2 sheets of plastic wrap, and lb. to 1/4 inch thickness using a meat mallet or possibly rolling pin.
  3. Dredge chicken in flour and then dip in the egg substitute mix.
  4. Heat a large non-stick skillet coated with cooking spray over medium heat.
  5. Add in the chicken ; cook 4 min on each side or possibly till done. Remove chicken from pan; keep hot.
  6. Heat butter spray in pan; mix the teaspoon of cornstarch into the wine and then add in the wine and lemon juice into the pan. Bring to a boil; cook for 10 seconds to thicken. Serve immediately over chicken.
