Chicken, green bell pepper, onion, and a few other ingredients are mixed with Italian seasoning and set to stew in your slow cooker for a few hours. It will make your house smell wonderful and your taste buds yern for seconds. Serve this dish with rice, egg noodles, or even mashed potatoes.

It's Monday.

I hope you are having a good one. If you, by chance, are reading this post in the evening, after all the craziness that comes along with the "M" word has died down, I hope your day was superb.

If it wasn't as great as you would have liked it to be, take comfort in the fact that this recipe for Chicken Cacciatore will change your life. I kid, I kid. While it won't exactly change your life, it will make things just a tad bit easier during dinner time.

When you think about it, that's really all we want when it comes days like today. Days when the coffee maker breaks and at the same time, the oven breaks (true story on my end).

Days when the kids are being super cranky because they had an extremely fun filled weekend and they don't want to get up to go to school, so they make things difficult for you all the way to entrance of the school (again, true story over here).

Days when a candy bar can literally taste ten times better then that stick of celery sitting in your fridge ever could.

Days such as these.

There is comfort in the fact that this wonderful appliance called a slow cooker and the food that comes out of it can make the troubles of Monday disappear.

Chop up your onions and green bell pepper, mix them with tomatoes, Italian seasoning, minced garlic, and a few other ingredients. Place them in your slow cooker along with some chicken and broth and you have just what the doctor ordered.

Ingredients:

Directions:

1. Place chicken breasts inside the slow cooker.

2. In a small bowl, combine the green bell pepper, onion, Italian Seasoning, diced tomatoes, minced garlic, and chicken broth.

3. Pour over the chicken.

4. Cover and cook on high for 5 hours.

5. Serve with 2 cups of cooked rice (recipe can be found here), egg noodles, or mashed potatoes. Garnish with mozzarella cheese and use salt/pepper to taste.
