Simple saute’s such as these Chicken Breasts in a Cream Sauce are perfect for quick weeknight meals.

2 tablespoons butter alternative (I used Earth Balance) 16 ounces boneless skinless chicken breast 1 scallion chopped 6 ounces Plain Greek yogurt, 2% ½ teaspoon coarse sea salt ¼ teaspoon fresh ground pepper

Heat a large skillet over medium-high heat. Add the butter on the skillet. When the butter is melted and the pan is nice and hot, add the chicken breasts. Cook chicken on both side about 5 to 6 minutes per side. Add the chopped green onion. Stir, and let the onion cook for 1–2 minutes. Turn off the heat. Add the salt and the yogurt. Mix well. Cover and let stand for 5 minutes. Mix well before serving. 3.2.2708

You know what the most difficult part is about blogging as much as I do? I can think of thousands of recipes I want to try, tweak or recreate without a problem. Photos are a struggle, but writing, now that’s the most difficult part for me.
