Chicken Barley Soup (Low Cal)

Ингредиенты

  • 3 lb Chicken cut in pcs
  • 1/2 c. barley
  • 9 c. Water
  • 2 Tbsp. Lemon Juice
  • 3 stalk celery with leaves
  • 1 sm Onion
  • 1/2 c. Minced onion
  • 1/2 c. carrot finely minced
  • 1/2 c. fresh parsley finely minced
  • 1 Tbsp. Salt
  • 1/2 tsp fresh grnd black pepper
  • 1/4 tsp Celery seed
  • 1 1/2 c. green beans fresh, cut

Инструкции

  1. Place chicken, water, leaves from celery and small onion in a large saucepan. (Reserve celery stalks.)
  2. Cover saucepan and bring to a boil; reduce heat and simmer 1 1/2 hrs till chicken is tender. Remove chicken. Strain broth into bowl; refrigeratetill fat sets on top. Remove fat.
  3. Remove skin and bones from chicken, throw away. Cut chicken into bite-sized pcs, set aside. (My note: if you want less than 8 servings, freeze extra broth and chicken separately in meal-sized portions.)
  4. Return broth to saucepan. Chop reserved celery stalks, add in to broth with minced onion, carrot, parsley, barley, lemon juice, seasonings.
  5. Cover and simmer 20 minutes.
  6. Add in fresh green beans and chicken; continue cooking 15 minutes or possibly till beans are tender.
