  • 3 c. self-rising flour plus
  • 1 Tbsp. self-rising flour divided
  • 1 tsp freshly-grnd black pepper
  • 3 lb chicken legs and thighs
  • 1/4 c. vegetable oil
  • 1 med onion chop
  • 2 x garlic cloves mince
  • 3 can chicken broth - (14 1/2 ounce ea)
  • 2 Tbsp. minced fresh basil (or possibly 2 tspn dry basil)
  • 2 Tbsp. minced fresh thyme (or possibly 2 tspn dry thyme)
  • 1 Tbsp. minced fresh rosemary
  • 1/2 tsp grated lemon zest
  • 1 tsp lemon juice
  • 1 c. whipping cream
  • 1/4 c. reduced-fat lowfat sour cream (optional)

  1. In a shallow bowl, combine 1 c. flour and black pepper. Dredge chicken pcs in flour mix.
  2. Heat oil in a Dutch oven over medium heat. Add in chicken and cook till golden, turning once; add in additional oil if needed. Remove chicken from Dutch oven, reserving drippings in Dutch oven.
  3. Add in onion and garlic to drippings and cook over medium heat, stirring constantly, till they become translucent/soft. Add in 1 Tbsp. flour and cook 1 minute, stirring constantly. Gradually add in broth, continuing to stir. Stir in basil, thyme, rosemary, lemon zest and juice; bring to a boil. Return chicken to Dutch oven and cover. Reduce heat and simmer 30 min. Remove chicken, keeping hot. Reserve broth in Dutch oven.
  4. In a large bowl, combine remaining 2 c. flour and whipping cream, stirring with a fork (the mix will be dry and crumbly). Gently pat flour mix into 2-inch balls, handling dough as little as possible.
  5. Bring reserved broth to a rolling boil; add in dumplings. Cover, reduce heat and simmer, without stirring, 7 to 10 min or possibly till dumplings are hard in center. Remove Dutch oven from heat; stir in lowfat sour cream. Serve dumplings and broth with chicken.
  6. This recipe yields 4 servings.
