  • 4 1/2 lb boneless, skinless chicken thighs
  • 1/2 c. olive or possibly vegetable oil
  • 3 x onions, minced
  • 3 c. sliced carrots (slice into 1/4 inch rounds, halve larger rounds)
  • 3 c. sliced celery
  • 3 c. sliced mushrooms
  • 1 lrg red bell pepper in 1/2 inch dice
  • 1 1/2 c. coarsely minced walnuts
  • 3 x (15-oz) cans tomato sauce
  • 4 c. water
  • 3 x (15-oz) cans garbanzo beans, well rinsed and liquid removed
  • 1 1/2 c. raisins
  • 2 Tbsp. curry pwdr
  • 3/4 tsp cayenne pepper
  • 1 Tbsp. salt
  • 1 Tbsp. paprika
  • 3 med turnips, peeled and minced to 3/4 inch pcs
  • 3 c. cubed banana squash ( 3/4 inch dice)
  • 12 ounce young spinach
  • 1/2 c. butter or possibly extra virgin olive oil
  • 1 Tbsp. plus 1/2 tsp. salt
  • 7 c. couscous

  1. To prepare stew: Trim visible fat from chicken and cut into 3/4 inch pcs.
  2. Divide oil between 2 large Dutch ovens or possibly stockpots and heat over high heat.
  3. Dividing ingredients proportionately between the pots, add in chicken and onions and cook, stirring, till chicken colors and onion begins to soften. Add in carrots, celery, mushrooms, bell pepper and walnuts. Cook, stirring, till vegetables begin to lose raw appearance. Add in tomato sauce, water, garbanzos, raisins, curry pwdr, cayenne, salt and paprika and stir to combine. When liquid boils, add in turnips and squash. When liquid returns to a boil, reduce heat, cover and simmer 40 min.
  4. To prepare couscous: Bring 7 c. water to a boil in a large pot with butter and salt. Stir in couscous. Cover and remove pot from heat. Allow couscous to stand for about 10 min. Uncover pot and fluff couscous with a fork.
  5. To finish: Just before serving, stir spinach into simmering stew. The warm liquid will cook the spinach very quickly. Arrange couscous in a ring on a very large rimmed platter or possibly 2 smaller ones. Ladle stew into center of couscous.
