I’m all about the easy of throwing a good sandwich together. Some of my favorites include Crock Pot Smokey BBQ Shredded Chicken Sandwich, Easy Cheesy Chicken Sandwiches and Artichoke Grilled Cheese! There’s something comforting to me in a sandwich. When I’m craving some good comfort food I often times crave a sandwich! I’ll admit it. I stay with a few favorites and don’t venture out very much further than that.
Do you know how sometimes you over commit yourself just a tad bit, or maybe even a LOT! I had one of those moments last winter and I’m not proud of it. In fact, I’m a bit ashamed to admit this. You see, my friend Tanya from Lemons for Lulu, came out with this AMAZING cook book “Sandwiched” and she asked me to review it and share it with my readers. Of course, I said YES! I’m all about helping friends out. I got it, made the sandwich to share and it was AWESOME and then I sorta, kinda hated the photos and I ignored it. Flat out ignored it. I’m a terrible, horrible person. This has been riding on me ever since, so today, I’m begging for her forgiveness and asking you to show her some love so I might possibly redeem myself!
I’ll admit it I’m a bit boring in the sandwich department. I have my favorites and that’s where I stick. Now my friend Tanya, is a whole different sandwich connoisseur! She’s adventurous and imaginative when it comes to creating sandwiches. Something I am not at all! What I love about all of her sandwiches in this amazing cookbook, Sandwiched, is that they may be unique but they are still amazingly delicious and easy! You all know that’s a must for me! She has filled this cookbook with fast and healthy sandwiches for everyday eating! Plus, she’s came up with sandwiches for breakfast, lunch and DESSERT you guys! See, told ya she’s creative!
This cookbook has everything from Chicken Parmesan Sliders, Cincinnati Chili Sloppy Joes, Caramel and Marshmallow Wafer Sandwiches and Mocha Donut Sandwiches! Tanya is a busy Mom with three kids so rest assured she kept in mind that you need to have dinner or lunch ready as soon as possible. She kept these recipes to a thirty minute time frame so you can feel good about making homemade meals, yet have time to get everything else done too!
Tanya and I go WAY back although I’m not sure how we really connected after I stop and think about it. I might have to ask her about that! We’ve actually met in real person, which is a big deal for us bloggers. Many of us are “virtual” friends and we long for the day we actually meet. When I met Tanya and roomed with her at a blogging conference a few years back she was as much fun in person as she was online. She gets me. She’s my “person”. I never have to wonder if she’s judging me or what she’s thinking. She a truly genuine and amazing friend. Always there to support me whenever I need it whether it’s blogging or life she’s got my back. I’m grateful for that!
You know what my husband’s grateful for? These amazing Chicken Alfredo Sandwiches that’s what! I thinking he was groaning over them they were so good. The perfectly seasoned and cooked chicken breast is topped with this out of this word homemade Alfredo sauce. You guys, this sauce, AMAZING! I could just eat it with a spoon. We were putting it on everything! Sandwich the chicken and sauce between two fabulously toasty pieces of bread and I’m swooning.
Tanya, my friend, you knocked this out of the ballpark! Print Chicken Alfredo Sandwich Recipe Prep Time: 5 minutes Cook Time: 21 minutes Yield: 6 sandwiches Serving Size: 1 sandwich Ingredients 1 tsp olive oil 1/2 chicken tenders salt and pepper 2 cloves garlic, minced 3 Tbsp flour 1 1/2 c. milk 2 oz cream cheese 1/2 tsp salt 1/4 c. Italian blend shredded cheese 1/4 Parmesan cheese Italian bread, sliced into 10-12 pieces Instructions Heat oil in a skillet over medium heat. Sprinkle chicken tenders with salt and pepper and place chicken in skillet. Cook chicken for 4 minutes per side. Remove and let chicken cool. Meanwhile, melt butter in a small saucepan. Whisk in flour and let cook for 1 minute. Whisk in milk, taking care to rid sauce of any lumps. Add cream cheese and continue to whisk until cream cheese is full incorporated. Season cheese sauce with salt and add shredded cheese. Whisk until smooth and creamy. Preheat oven to 350 degrees. Toast bread for 6-8 minutes turning once. Remove bread slices from oven and set the oven to broil. Halve each chicken tender and place two tenders on half of the bread slices. Spoon cheese sauce over chicken. Broil for 3 minutes, or until cheese is golden and bubbly. Top cheese and chicken with remaining bread slices. Serve.
