%20doesn't%20have%20room%20for%20an%20entire%20cake,%20especially%20since%20coconut%20cake%20is%20often%20made%20with%20milk%20so%20it%20wouldn't%20be%20likely%20to%20be%20a%20Shabbos%20treat%20in%20my%20carnivorous%20house.%20So,%20I%20attempted%20to%20make%20a%20chewy%20coco-nutty%20cookie%20that%20could%20be%20shaped%20small,%20like%20gingersnaps,%20so%20I%20don't%20eat%20too%20many.%20Plus,%20Alexander%20will%20eat%20all%20of%20them%20anyway%20(as%20long%20as%20no%20one%20tells%20him%20coconut%20is%20a%20fruit!)%3C/p%3E%3Cp%3ECream%20the%20eggs%20with%20the%20sugar%20and%20add%20the%20shortening.%20Beat%20until%20there%20are%20no%20lumps.%20Then,%20add%20the%20rice%20milk%20and%20extract.%20In%20a%20separate%20bowl,%20combine%20the%20dry%20ingredients%20and%20then%20mix%20slowly%20into%20the%20batter.%20Empty%20dough%20onto%20plastic%20wrap%20and%20refrigerate%20for%20at%20least%20two%20hours.%3C/p%3E%3Cp%3EWhen%20ready%20to%20bake,%20preheat%20oven%20to%20375%20degrees.%20Roll%20out%20the%20dough%20with%20a%20small%20amount%20of%20flour%20to%20approximately%20a%20quarter%20of%20an%20inch%20in%20thickness.%20Then,%20spread%20coconut%20over%20the%20top,%20pressing%20it%20only%20lightly%20into%20the%20dough,%20so%20a%20little%20bit%20hangs%20off.%20Using%20a%20small%20glass%20(I%20recommend%20a%20shot%20glass),%20cut%20rounds%20and%20place%20on%20a%20parchment-papered%20cookie%20sheet.%20Cook%20for%208%20minutes,%20just%20until%20the%20coconut%20toasts%20on%20top.%20Any%20longer%20and%20the%20cookies%20will%20be%20more%20crisp.%20Leave%20on%20the%20cookie%20sheet%20until%20cooled.%20Enjoy!%3C/p%3E){kind=link}
